1. Preparing the bacon and eggs:
– In a large skillet, cook the bacon over medium heat until crispy. Remove from the skillet and set aside on a paper towel-lined plate.
– Drain most of the bacon grease, leaving just enough to cook the eggs.
– Crack the eggs into the skillet and cook to your desired level of doneness (sunny-side up, over easy, or scrambled). Season with salt and pepper to taste. Remove from heat and set aside.
2. Preparing the sauce:
– In a small bowl, combine mayonnaise, Dijon mustard, honey, and paprika. Mix well until all ingredients are fully incorporated. Adjust the seasoning to your taste.
3. Assembling the sandwich:
– Toast the bread slices until golden brown.
– Spread a generous amount of the sauce on one side of each slice.
– On the bottom slice, layer the spinach leaves, followed by the tomato slices.
– Place the cooked bacon on top of the tomatoes, followed by the avocado slices.
– Add a slice of cheese on top of the avocado.
